After the salty experience, you’ll continue to Læsø Tang, where seaweed tours along the beach and exciting culinary events await you. Here, you’ll have the opportunity to harvest and prepare seaweed for small, delicious dishes. In the shop, you can find a wide variety of seaweed products in different forms and flavors.

In Læsø's seaweed theme, the journey continues to Gl. Østerby, where the Seaweed House Route reveals the unique history behind the island's seaweed roofs. Læsø's seaweed roofs, along with salt production, are at the heart of Læsø's cultural heritage. The story behind the seaweed roofs is unique. They emerged due to salt production, which cleared the island of trees and created poverty for an extended period. This led to the use of alternative materials, such as constructing roofs from stranded eelgrass. It was the women who developed the technique of thatching with eelgrass. The eelgrass was gathered from the beach, transported home by horse-drawn cart, and dried. Thatching a roof was a communal task, involving multiple residents.

I wish VesterØl's dogma-free, sharp kitchen and umami-rich gourmet light dishes made from local ingredients were my local bistro and not just a fleeting holiday fling. Thomas and Kamilla have managed to create a relaxed and cozy atmosphere in the old freezer room with a view.
